It's entirely up to your strategy to decide which jobs to assign your villagers, but remember that keeping them happy should be your primary priority as a good leader. No one fights for someone else when their stomach is constantly growling. You need to assign jobs to your villagers that match their stats. If you ask a weak villager to chop wood or mine, they'll be unhappy. You must provide your villagers with a place to sleep so they'll join you. However, an empty house won't make anyone wake up happy for a new day. You need to craft and place furnitures in your villagers' homes. Finally, believing they'll survive an incoming raid will make your villagers happy. For this, you should craft armor and give it to them. As your village develops, it'll start to become a city. You'll be able to build massive stone walls and place defensive weapons on them. You'll need this because armies, not just bandits, will begin to attack your city.
